Basic Tiramisu (without whipping cream)

Ingredients
- For the mascarpone cream For the mascarpone cream
- 3 egg yolks 3 egg yolks
- 2 tbsp sugar 30 ml sugar
- 1 tsp vanilla extract 4.9 ml vanilla extract
- 2 cup mascarpone cheese 480 ml mascarpone cheese
- For the coffee mixture For the coffee mixture
- 1 cup Espresso coffee (cold) 240 ml Espresso coffee (cold)
- 3 tbsp coffee liqueur or Amaretto (Kahlua or similar) 44 ml coffee liqueur or Amaretto (Kahlua or similar)
- 32 ladyfingers 32 ladyfingers
- Cocoa powder for garnish Cocoa powder for garnish
Method
To make the mascarpone
In a bowl whisk the egg yolks with the sugar and the vanilla extract until creamy and pale yellow in color. Add the Mascarpone cheese and mix until you get a smooth mixture.
To make the coffee mixture
In a bowl mix the coffee and the liqueur and set aside.
Tiramisu assembly
Dip half of the ladyfingers in the coffee mixture, one at a time, and then lay them on a serving dish, one next to the other. Pour over them half of the mascarpone cream and smooth using a spatula.
Repeat the above procedure with the remaining ladyfingers and mascarpone cream to complete the second layer. Cover with plastic wrap and refrigerate for at least 6 hours (preferably overnight).
Garnish with sifted cocoa powder, about 30 minutes before serving.

The original recipe requires the whipped egg whites, to be added to the mascarpone + egg mixture.
