Tarragon wine sauce

Ingredients
- 2 tbsp butter 30 ml butter
- 1 tbsp fresh tarragon (chopped) 15 ml fresh tarragon (chopped)
- 1 shallot, finely chopped 1 shallot, finely chopped
- 2/3 cup dry white wine 160 ml dry white wine
- 1/4 cup light cream 60 ml light cream
- Salt and pepper to taste Salt and pepper to taste
Method
Melt the butter in a saucepan. Add the shallot
and cook until soft. Pour in the wine, add the tarragon and season with salt and
pepper. Simmer for 5 minutes. Place sauce in a food processor or blender and puree until smooth. Return to saucepan, stir in the cream and reheat before
serving.
