Chicken breasts with prosciutto and cheese

Ingredients
- 4 chicken breasts, skinned and boned 4 chicken breasts, skinned and boned
- 1/2 cup flour 120 ml flour

- 1 tbsp butter 15 ml butter
- 8 thin slices of prosciutto, cut into 2x4 inch pieces 8 thin slices of prosciutto, cut into 2x4 inch pieces
- 8 thin slices of Fontina cheese, cut into 2x4 inch pieces 8 thin slices of Fontina cheese, cut into 2x4 inch pieces
- 2 tbsp chicken stock 30 ml chicken stock
- 4 tbsp Parmesan cheese (freshly grated) 59 ml Parmesan cheese (freshly grated)
Method
Cut each chicken breast into half to make 8 slices total. Put each chicken piece between two layers of plastic wrap and with the flat side of a meat mallet or a rolling pin, pound the chicken slices so that they flatten slightly.
Mix the black pepper into the flour and dredge the chicken pieces into the mixture, covering completely on both sides.
In a large skillet heat the butter and olive oil over a medium to high heat. Cook the chicken pieces on both sides until they turn light gold. Lay the chicken pieces in a shallow baking pan and then lay prosciutto and cheese slices over each piece of chicken. Drizzle the chicken stock and sprinkle the parmesan cheese over the chicken.
Bake at 350F for 10 minutes, or until the cheese is melted and lightly browned.
Serve immediately. For a complete meal, serve with mashed potatoes, a green salad and Italian bread.
