Italian crock pot chicken

An easy, healthy and low fat Italian chicken recipe.

Ingredients

  • 2 lb chicken pieces (skin removed)
  • 3 cup fresh mushrooms (sliced)
  • 1 large onion, chopped
  • 2 clove garlic (minced)
  • 1 cup red wine (preferably a Merlot wine)
  • 1 can tomatoes (chopped or crushed)
  • 3 sprig fresh thyme (or 1 tsp dried thyme)
  • 4 fresh basil leaves, chopped (or 1 tsp dried basil)
  • 1 tbsp fresh oregano (or 1 tsp dried oregano)
  • A pinch of red chili flakes
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper (freshly ground)

Method

Place the chicken pieces in a crock pot. Place the onion, garlic, and mushrooms over the chicken, in layers. Add the remaining ingredients (tomatoes, wine, basil, oregano, thyme, red chili flakes, sugar, salt, black pepper), cover and cook on low heat for 7 to 8 hours, or on high heat for 3 1/2 to 4 hours.

Serve with pasta and a simple green salad.
