Peri Peri chicken wings

Ingredients

- 1 cup sweet Peri Peri marinade (see recipe below) 240 ml sweet Peri Peri marinade (see recipe below)
- Salt and freshly ground black pepper to taste Salt and freshly ground black pepper to taste
Method
Preheat oven to 220°C.
Place the chicken wings in a large bowl and pour over the marinade. Season with salt and black pepper to taste, then toss well until every chicken wing is covered with the marinade. Cover with plastic wrap and marinade in the refrigerator for at least 30 minutes.
Grill marinaded chicken wings for 15 to 20 turning every 4 to 5 minutes.
Serve on a large serving dish on a bed of lettuce leaves.

Homemade Peri Peri chicken wing sauce
Ingredients
3 pickled jalapeno peppers, chopped
3 dried Anaheim chiles
2 Chipotle chiles
1/2 cup cider vinegar
10 - 12 Tbsp olive oil
1/2 tsp cayenne pepper
1 tsp chili flakes
2 tsp garlic powder
2 Tbsp paprika
2 tsp salt
2 tsp dried oregano
1/3 cup brown sugar
1/4 cup molasses
1 Tbsp honey
Method
Add all the ingredients except the brown sugar, honey and molasses in a blender and process until smooth (use as much olive oil as necessary to achieve a smooth consistency). Empty the blended ingredients in a saucepan over medium heat. Add the brown sugar, molasses and honey, stir well and bring to a boil. Lower heat and simmer for about 15 minutes. Empty the sauce in a jar and let cool, then refrigerate until needed.
