Chocolate affogato

Ingredients
- 1/3 cup heavy cream 80 ml heavy cream
- 1/2 cup strong Espresso 120 ml strong Espresso
- 4 scoops good quality chocolate ice cream 4 scoops good quality chocolate ice cream
- 8 tbsp chopped or grated semisweet chocolate 120 ml chopped or grated semisweet chocolate
- 1/2 cup dark rum 120 ml dark rum
Method
Prepare the Espresso coffee (you can also use 1 Tbsp instant Espresso powder dissolved in 1/2 cup hot water).
Beat the cream until stiff peaks form. Set aside.
Place 1 scoop of the chocolate ice cream into a tall glass. Top with 2 tablespoons of Espresso, 2 tablespoons of rum, a dollop of whipped cream and 2 tablespoons of dark chocolate. Repeat with the remaining 3 servings and serve immediately.

Cook's notes
You can double the amount of ingredients for 8 servings or 4 double sized chocolate affogatos.
