Migas tacos

Ingredients
- 1 tbsp olive oil 15 ml olive oil
- 4 tbsp chopped jalapeno chiles 59 ml chopped jalapeno chiles
- 1/2 cup diced tomatoes (juice drained and discarded) 120 ml diced tomatoes (juice drained and discarded)
- 1/2 cup diced onion 120 ml diced onion
- 2 cup lightly crushed tortilla chips 480 ml lightly crushed tortilla chips
- 2 cup Monterey Jack or mild cheddar cheese (grated) 480 ml Monterey Jack or mild cheddar cheese (grated)
- 4 eggs 4 eggs
- 4 (10 inch) flour tortillas 4 (10 inch) flour tortillas

Method
In a frying pan over medium heat add the olive oil, jalapeno chiles, tomatoes, onions and tortilla chips and saute for 5 to 6 minutes or until the onion is soft.
In another frying pan over medium low heat add the cheese and gently melt.
In the meantime heat the flour tortillas in the oven or microwave (according to instructions on the packaging) until warm.
To serve, place a warm tortilla on a plate, spoon 1/4 of the melted cheese, follow by 1/4 of the cheese mixture and top with salsa. Repeat with the remaining ingredients and serve immediately.
