Easy ground beef tacos

Easy ground beef tacos
Crispy taco shells filled with a spicy ground beef mixture and topped with shredded cheese, lettuce, tomatoes and salsa. A simple Mexican favorite dish that is easy to make. The beef mixture can be made ahead and preheated just before serving.

Ingredients

  • 1/4 cup vegetable oil
  • 1/2 onion, finely chopped
  • 3 jalapeno chiles, chopped
  • 3 clove garlic (minced)
  • 2 lb ground beef
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tbsp chopped fresh cilantro (coriander)
  • 1/2 tsp cayenne pepper
  • 1/2 cup salsa
  • Salt and black pepper to taste
  • 1 tbsp lime juice
  • 16 taco shells
  • For garnishing
  • Shredded mild cheddar cheese
  • Shredded iceberg lettuce
  • Diced tomatoes
  • Salsa

Method

In a skillet or frying pan over medium heat add the vegetable oil and heat. Add the onions and jalapeno chiles and  cook for about 10 minutes, or until the onions are soft and translucent. Add the garlic and cook for 2 minutes more. Add the ground beef, chili powder, cumin, oregano, cilantro, cayenne pepper, salsa, salt and pepper and stir well. Cook for 6 to 8 minutes, stirring frequently, until the beef is brown. Turn heat to low, cover and simmer for 15 minutes more, stirring occasionally. Uncover, add the lime juice and stir well. Remove from heat and set aside.

Heat the tacos according to directions on the package.

To assemble the tacos take a taco shell and spoon about 2 heaping tablespoons of the beef mixture in it. Top with cheddar cheese, lettuce, tomatoes and salsa and serve immediately.
