El Charro salsa de chile verde (El charro basic green chile sauce)

Ingredients
- 2 tbsp vegetable oil 30 ml vegetable oil

Method
In a medium saucepan or skillet over medium high heat add the vegetable oil and onion and saute until soft translucent.
Add the flour and mix until well combined. Stir in the roasted green chiles, minced garlic, chicken stock and salt. Lower heat and simmer for 20 minutes.
Empty the sauce in a blender and process until smooth. You can use the sauce hot, with enchiladas or you can cool it down and refrigerate it for later.
