Onion salsa

A different salsa that can be used instead of the regular tomato salsa, this one uses a combination of white, red and green onions, together with garlic, jalapeno chili, and coriander.

Ingredients

  • 1 white onion, peeled and finely chopped
  • 1 red onion, peeled and finely chopped
  • 4 green onions, finely chopped
  • 1 bunch fresh cilantro (coriander; finely chopped)
  • 1 ripe tomato, cubed
  • 1/2 Jalapeno chili, finely chopped
  • 3 clove garlic (minced)
  • 2 tbsp tomato sauce
  • A splash of red wine vinegar
  • 1/2 tsp salt
  • 1 tbsp vegetable oil

Method

Combine the white onion, red onion, green onion, cilantro, tomato, jalapeno chili, and garlic into a bowl.

In another bowl combine the tomato sauce, vinegar, salt and vegetable oil and whisk until well combined.

Drizzle the dressing over the chopped onions and tomato and use a spoon to mix thoroughly, until well combined. Cover with plastic wrap and refrigerate for 2 to 3 hours before serving.
