Spicy potato wedges with sour cream dipping sauce

General
Ingredients

- 2 lb potatoes with skin on (1 Kg) 905 g potatoes with skin on (1 Kg)
- 2 tbsp olive oil 30 ml olive oil
- 1/2 tsp dried oregano 2.5 ml dried oregano
- 1 tsp ground coriander 4.9 ml ground coriander
- 2 tsp cumin powder 9.9 ml cumin powder
- 1 tsp sweet paprika 4.9 ml sweet paprika
- 1/2 tsp chili powder (adjust quantity to taste) 2.5 ml chili powder (adjust quantity to taste)
- 1 tsp ground turmeric 4.9 ml ground turmeric
- Salt and black pepper to taste Salt and black pepper to taste
- For the sour cream dipping sauce For the sour cream dipping sauce
- 2 cup sour cream 480 ml sour cream
- 1/2 cup mayonnaise 120 ml mayonnaise
- 4 tbsp chives (finely chopped) 59 ml chives (finely chopped)
- 1/2 tsp garlic powder (or to taste) 2.5 ml garlic powder (or to taste)
- Salt and pepper to taste Salt and pepper to taste
Method
Wash the potatoes and cut them in wedges (with the skin on) (cut them in 4 to 6 wedges, depending on the shape and size of each potato).
Combine all the spices in a bowl.
Put the potato wedges in a roasting tray or baking dish and drizzle the olive oil on top of them. Empty the mixed spices over and toss them well until all the wedges have been uniformly covered with the spices and olive oil.
Roast in the oven for about 40 minutes at 350 degrees F (160 degrees C). Use a fork to check if they are done.
While the wedges are roasting prepare the dipping sauce by combining all ingredients in a bowl. Cover the dipping sauce with plastic wrap and chill until the wedges are ready to be served.
Serve the wedges hot, with the dipping sauce on the side.
