Pasta in sage and brown butter sauce

Ingredients
- 5 tbsp unsalted butter 74 ml unsalted butter
- A handful fresh sage leaves (around 20 small sage leaves) A handful fresh sage leaves (around 20 small sage leaves)
- 1/4 cup chicken broth 60 ml chicken broth
- Salt and black pepper to taste Salt and black pepper to taste
- Pasta for 4 (around 120g per person) Pasta for 4 (around 120g per person)
- Grated Parmesan cheese (to serve with) Grated Parmesan cheese (to serve with)
Method
Start cooking the pasta in lots of salted, boiling water. Make sure you cook them 'al dente' (check the cooking time on the packaging).
While the pasta is cooking, start making the sauce.
In a saucepan over medium heat add the butter and cook, stirring occasionally for 5 minutes, or until the butter starts turning brown. Add the fresh sage leaves and the chicken stock and reduce the heat to low. Let the sauce simmer for about 3 to 4 minutes, until slightly thickened. Taste and season with salt and black pepper to taste.
When the pasta is cooked, drain and return to the cooking pot. Pour the brown butter sage sauce on top of them and toss well until the pasta is well covered in the sauce.
Serve in individual dishes with freshly grated Parmesan cheese on top.
