Beef and bean burritos

Ingredients

- 2 cup grated cheddar or Jack cheese 480 ml grated cheddar or Jack cheese

Method
Place a large skillet or frying pan over medium high heat. Add the ground beef and cook for 5 to 6 minutes, or
until brown, breaking up any lumps that may form.
Add the onion and garlic and cook for 5 minutes, stirring occasionally. Stir in the cumin and cook for 1 minute.
Add the beans and beef broth and cook for about 20 minutes, stirring occasionally and crashing the beans with the back of a spoon until the sauce is creamy and thick. Add the green onions and stir well.
Preheat oven to 400 degrees F.
To assemble the burritos divide the beef and bean mixture among the tortillas. Roll up each of the tortillas and place them seam side down onto an oiled baking dish (it should be wide enough to hold a tortilla lengthwise and long enough to hold 8 rolled up tortillas). Top tortillas with the grated cheese and bake in the oven for 10 minutes, or until the cheese is bubbly.
Serve with sour cream and salsa.

Cook's notes
You can optionally top the tortillas first with a chili gravy sauce, then with the cheese.
