Pork or chicken burritos

Ingredients
- 1 lb lean boneless pork butt or shoulder (or an equal amount of chicken breasts) 455 g lean boneless pork butt or shoulder (or an equal amount of chicken breasts)
- 1 1/2 cup water 360 ml water
- 3 tbsp mild red chile powder 44 ml mild red chile powder
- 1 clove garlic (minced) 1 clove garlic (minced)
- 3/4 tsp salt 3.7 ml salt
- 1/2 tsp dry oregano 2.5 ml dry oregano
- 2 tsp red wine vinegar 9.9 ml red wine vinegar
- 6 (10 inch) flour tortillas 6 (10 inch) flour tortillas

Method
Cut the chicken or pork into about 1 inch cubes.
Place the meat in a large saucepan over medium high heat and add the water. Bring to a boil, reduce heat, cover, and simmer for about 1 hour if using pork, 25 minutes if using chicken. Skim off any excess fat that forms at the surface.
Add the chile powder, garlic, salt, oregano and vinegar to the meat. Simmer, uncovered, stirring occasionally, for about 35 to 45 minutes, or until the sauce thickens.
Warm the tortillas in the oven (wrapped in aluminum foil) or in a microwave oven.
Spoon 1/6th of the pork or chicken mixture filling along the center of each tortilla. Top with any of the garnishes (use whatever you like), fold the left and right sides of the tortilla, then roll.
