Fast chicken cacciatore (Pollo cacciatore)

Ingredients
- 3 tbsp olive oil 44 ml olive oil

- 2 cup sliced button mushrooms 480 ml sliced button mushrooms

- 1 (6 oz.) can tomato paste 1 (6 oz.) can tomato paste
- 1 tsp dried basil 4.9 ml dried basil

Method
In a frying pan over medium high heat add the olive oil and chicken breasts and fry until brown, turning occasionally. Remove chicken and drain on paper towels.
Add the sliced mushrooms, garlic, tomatoes, tomato paste and basil and season with salt and black pepper to taste. Fry for 2 minutes, turning constantly.
Return chicken breasts to the pan, cover, lower heat and simmer for 30 minutes.
Serve on top of penne or similar shaped pasta or with freshly made garlic bread.
