A traditional way of making the famous Mexican Guacamole

Ingredients

  • For the guacamole
  • 3 large avocados
  • 1/2 cup tomatoes (finely chopped, skin on)
  • 3 tbsp finely
  • chopped white onion
  • 4 serrano chiles, finely chopped
  • 1 tbsp lime juice (freshly squeezed)
  • 2 tbsp fresh coriander
  • 1
  • tsp sea salt
  • For garnishing
  • 2 tbsp tomatoes (finely chopped)
  • 2 tbsp white onion (finely chopped)
  • 1 tbsp coriander (finely chopped)

Method

In a molcajete or blender grind the white onion, fresh serrano chiles, coriander and salt to a rough paste. Cut the avocados in half, remove and discard the pits and scoop out the flesh. If you do not intend to serve the guacamole immediately,  sprikle the lime juice over the avocados. Mash the avocado flesh roughly into the onion and chile mixture. Stir well until the avocado blends well with the rest of the ingredients. Sprinkle with the garnishing ingredients and serve.

Cook's notes

Server guacamole with tortilla chips or in a warm, corn tortilla.
