Carne Asada (Marinated beef)

Ingredients
- 2 lb flank steak or similar cut 905 g flank steak or similar cut

- 1/2 cup tequila 120 ml tequila
- 1/2 cup lime juice 120 ml lime juice
- 1/4 cup lemon juice 60 ml lemon juice
- 4 clove garlic crushed 4 clove garlic crushed

- 1 cup salsa 240 ml salsa
- 1 cup guacamole 240 ml guacamole
- 1 tsp tabasco sauce 4.9 ml tabasco sauce
- 12 flour tortillas 12 flour tortillas

Method
In a large bowl add the tequila, lime juice, lemon juice and tabasco sauce. Add the garlic, onion and black pepper and stir well to combine all ingredients. Add the beef and toss well in the marinade, until well covered in it. Cover with plastic wrap and refrigerate for 3 to 4 hours, turning meat often.
Preheat grill.
You can warm the tortillas in the oven or microwave but since you will be using the grill, you can use that to warm them through. To heat the tortillas using the grill, sprinkle them with a few drops of water (this will keep them soft), stack them up and wrap them in aluminum foil. Place them on the grill.
Remove the meat from the marinade (reserve the marinade). Place it on the grill abd cook it for 12 to 15 minutes, turning once midway. Brush the beef steak with the marinade during grilling.
Remove steak and tortillas from the grill. Slice the steak into long, thin stripes. To serve, place warm tortilla on a plate, top with a few strips of beef and top with salsa, sour cream and guacamole.
