Easy orange chicken

Ingredients
- 4 boneless chicken breast halves, skinned 4 boneless chicken breast halves, skinned
- 2 tbsp butter 30 ml butter

- 1 cup fresh orange juice 240 ml fresh orange juice
- 1/2 tsp dried tarragon (crumbled) 2.5 ml dried tarragon (crumbled)
- 1 cup single cream 240 ml single cream
- Salt and pepper to taste Salt and pepper to taste
Method
Cook the chicken breasts
Wrap the chicken breasts in plastic wrap and using a rolling pin or similar, flatten them out a bit.
In a large skillet over medium heat melt the butter and saute the chicken breasts (in batches) until brown on both sides and cooked through, for 8 to 10 minutes. Remove, set aside and keep warm.
Prepare the orange chicken sauce
In the same skillet add the onion and saute for a few minutes until transluscent, but not brown. Add the orange juice, zest, tarragon, and cream. Season with salt and black pepper, to taste. Cook for 6 to 8 minutes, stirring frequently, until the sauce is slightly thickened.
Serve chicken breasts in individual dishes pouring some of the orange sauce over, together with rice or fried poatoes.
