Red Chile Sauce #1

A basic red and smooth chile sauce, made with chile powder instead of fresh chiles. This sauce is ideal for use in most Mexican recipes that call for a red sauce. It can be used with enchiladas, burritos, fajitas, chimichangas and many more. The heat  of the chili sauce can be adjusted to taste, by using a combination of mild and hot chili powders.

Ingredients

  • 2 cup hot water
  • 3/4 cup chile powder (use hot, mild, or a combination, to taste)
  • 3 garlic cloves, crushed and peeled
  • 1 medium onion, roughly chopped
  • 1 tsp sugar
  • 1 tsp dried cumin
  • Salt to taste

Method

In a bowl pour the hot water and chile powder. Stir using a fork until a thin paste is formed. Let sit for 30 minutes.

Add the garlic, onion, cumin, sugar and chile powder in a blender. Process until smooth. Add more water if needed, to achieve the desired consistency. Taste and adjust with more salt, if needed.

Strain into a large saucepan over medium heat. Bring sauce to a boil, lower heat and simmer for 15 minutes.

Serve hot or cool and refrigerate. The sauce can be refrigerated for about a month.
