Ingredients
- 2 cup white rice 480 ml white rice
- 4 cup water 960 ml water
- 1 cup mayonnaise 240 ml mayonnaise
- 1 small red onion, chopped 1 small red onion, chopped
- 1/2 red bell pepper, seeded and chopped 1/2 red bell pepper, seeded and chopped
- 1/2 green bell pepper, seeded and chopped 1/2 green bell pepper, seeded and chopped
- 3/4 cup Salsa picante 180 ml Salsa picante
- 1/2 cup grated cheddar cheese 120 ml grated cheddar cheese
Method
Add the rice and water in a cooking pot and bring to a boil. Reduce heat, cover and cook for 20 minutes. Turn off heat and leave covered for 15 minutes more.
In a bowl, mix the mayonnaise, onion, red and green bell peppers, salsa picante and cheddar cheese. Add to the cooked rice, return to heat and cook for 5 to 6 minutes, stirring often.
