Rice Picante

White rice cooked in water and then mixed with bell peppers, mayonnaise, onion, cheese and salsa picante. Great with traditional Mexican dishes such as tacos, enchiladas, chimichangas etc.

Ingredients

  • 2 cup white rice
  • 4 cup water
  • 1 cup mayonnaise
  • 1 small red onion, chopped
  • 1/2 red bell pepper, seeded and chopped
  • 1/2 green bell pepper, seeded and chopped
  • 3/4 cup Salsa picante
  • 1/2 cup grated cheddar cheese

Method

Add the rice and water in a cooking pot and bring to a boil. Reduce heat, cover and cook for 20 minutes. Turn off heat and leave covered for 15 minutes more.

In a bowl, mix the mayonnaise, onion, red and green bell peppers, salsa picante and cheddar cheese. Add to the cooked rice, return to heat and cook for 5 to 6 minutes, stirring often.
