Avocado salsa

Ingredients
- 1 large ripe tomato, diced 1 large ripe tomato, diced
- 1/4 cup red onion (finely chopped) 60 ml red onion (finely chopped)

- 2 tbsp fresh coriander (finely chopped) 30 ml fresh coriander (finely chopped)
- Juice of 1 lime Juice of 1 lime
- 1/2 tsp ground cumin 2.5 ml ground cumin
- Salt and freshly ground black pepper to taste Salt and freshly ground black pepper to taste
Method
Combine all ingredients in a mixing bowl, mix well using a fork. Taste and adjust with more salt, black pepper and / or lime juice. Cover with plastic foil and put in the refrigerator for at least 30 minutes to allow the flavours to develop.
