Avocado pasta salad

Ingredients
- 2 medium avocado, roughly chopped 2 medium avocado, roughly chopped

- 12 tbsp olive oil 175 ml olive oil
- 1/2 tsp sugar 2.5 ml sugar
- 2 tsp dried dill 9.9 ml dried dill

- Grated parmesan cheese Grated parmesan cheese
Method
Cook the pasta according to instructions on the packaging. Drain, rinse in cold water, drain again and set aside.
To make the sauce, combine the olive oil, vinegar, sugar, dill, salt and pepper and blend with a hand blender or stir vigorously using a fork or spoon.
In a large bowl, add the pasta, avocado, pickled red peppers and capers. Pour the sauce over, toss well until the ingredients are coated evenly, top with the grated parmesan cheese and serve.

Cook's notes
Make sure you rinse the pasta in plenty of cold water after it is finished cooking. This will stop it from overcooking.
