Simple salad dressing with cherry tomatoes and fresh basil leaves

Ingredients

- 2 tbsp red wine vinegar 30 ml red wine vinegar
- 2 tsp balsamic vinegar 9.9 ml balsamic vinegar
- 5 tbsp extra virgin olive oil 74 ml extra virgin olive oil
- 1/2 cup cherry tomatoes (halved) 120 ml cherry tomatoes (halved)
- 1/2 cup chopped fresh basil leaves 120 ml chopped fresh basil leaves

Method
In a blender or food processor add the garlic, shallot or onion, red wine vinegar, balsamic vinegar and olive oil. Process at high speed for about a minute, until the sauce is smooth and well blended.
Add the tomatoes and basil and season to taste with salt and pepper. Process briefly, until the tomatoes are finely chopped but not completely poureed.
Pour into a bowl, cover with plastic wrap and chill in the refrigerator for several hours, until needed.
Makes about 1 cup of salad dressing.
