Ingredients
- 1/2 cup olive oil 120 ml olive oil
- 1/4 cup red wine vinegar 60 ml red wine vinegar
- 1 medium shallot or 1 small red onion, roughly shopped 1 medium shallot or 1 small red onion, roughly shopped
- 1/3 clove garlic (crushed) 0.33 clove garlic (crushed)
- 1/4 tsp dried basil 1.2 ml dried basil
- 1/4 tsp black pepper 1.2 ml black pepper
- Salt to taste Salt to taste
Method
Combine all the ingredients in a blender and process at highest speed for about a minute, until the onion or shallot is completely dissolved. The resulting dressing should be creamy and have a pink color if using a red onion.
Cover and chill overnight in the refrigerator.
