Steak Tampiquena, Tex Mex Style recipe

Thin, tender beef steaks, grilled and topped with a garlic, onion and tomato mixture, green chiles and cheese. A simple, yet delicious Mexican or Tex-Mex dish that can be ready in as few as 20 minutes.
Preparation time: 5 minutes, Cooking time: 15 minutes, Serves: 4 

Ingredients

2 Tbsp olive oil
1 medium onion, minced
4 garlic cloves, minced
3 medium tomatoes, chopped

4 thin tenderloin, short loin or skirt steaks
Salt to taste
2 (4 ounce) cans whole green chili peppers
4 slices of cheddar or Monterey Jack cheese

Directions

Preheat gril.

Heat olive oil in large frying pan. Add the onion, garlic and tomatoes and saute for 3-4 minutes, until tender. Set aside and keep warm.

Salt both sides of each steak. Place steaks on grill over medium-hot to hot flames. Cook for about five minutes, without flipping. Flip and spoon some of the tomato, onion and garlic mixture over the cooked side of the steak. Top with a few strips of chili, to taste. Place a slice of cheese on top and continue cooking for 4-5 minutes more, until the cheese is melted and the steak is cooked through.

Serve with jacked potatoes and guacamole, salsa or your favorite Mexican condiments.
