Pollo picante (spicy chicken) recipe
Share this recipe on FacebookPollo picante is chicken breasts cooked in a hot sauce made with onions, garlic, bell peppers, tomatoes, jalapenos, bay leaves and garlic. The sauce is quite hot as it uses Tabasco sauce, black pepper, cayenne pepper and jalapenos. If you fo not like hot dishes, reduce the amount of cayenne, black pepper and Tabasco used. For a complete meal serve this dish with Mexican fried rice, flour tortillas and a simple green salad made with celery and avocado.

Ingredients
4 chicken breasts, skinned
3 Tbsp flour
1 tsp salt
1 tsp black pepper
1/4 cup olive oil
2 cups chopped onions
2 cups chopped red or green bell pepper
1/4 cup chopped celery
1/4 cup chopped fresh jalapeno chiles
2 1/2 cups chopped tomatoes
2 bay leaves
1 cup chicken stock
1 Tbsp sweet paprika powder
4 garlic cloves, chopped
1 Tbsp Tabasco sauce (or to taste)
1 tsp cayenne pepper (or to taste)
Directions
In a large bowl mix the flour, salt and black pepper. Dredge the chicken
breasts in the flour mixture. Heat oil in a large skillet or frying pan and brown the chicken evenly on all sides. Remove chicken from the pan,
and set aside.
In the same pan saute the onions, bell
pepper, celery, and jalapeno chiles for 4 to 5 minutes. Add the tomatoes and bay leaves and cook for 5
minutes, turning occationally.
Add the chicken, chicken stock, paprika powder, garlic cloves, Tabasco sauce and cayenne pepper. Lower heat and cook covered for 20
to 25 minutes. Uncover, and continue cooking for 5 to 10 minutes until excess liquid is evaporated.
Serve with an avocado and lettuce salad,
warm flour tortillas and Mexican fried rice.
