Ingredients 8 corn tortillas Vegetable oil for frying 2 cups refried beans (canned or homemade) 4 cups grated cheddar cheese Sliced jalapenos
To serve with Guacamole Pico de gallo Sour cream Directions Fry the tortillas In a frying pan heat the vegetable oil to 350 degrees F (175 degrees C). Fry the tortillas, one at a time, for about 2 minutes per side. Remove and place on paper towels. Continue with the remaining tortillas. Heat the refried beans and stir until creamy. Assemble the tacos Spread a fried tortilla with 1/4 cup refried beans. Top with 1/2 a cup of the grated cheese Repeat the process for all tortillas.
Lay tortillas on a cookie sheet and place in the broiler for 1 to 2 minutes, or until the cheese is melted and bubbly. Remove from the oven and cut each tortilla into 8 pieces (cut in half, then in quarters and finally in 8ths). Top each piece with sliced jalapenos, pico de gallo, guacamole or sour cream (you an use any combination of toppings you like or you can serve them with the toppings on the side).
