Preparation time: 10 minutes, Cooking time: 15 minutes, Serves: 4
Ingredients 4 Tbsp butter, unsalted 8 slices of bacon, cut in 1/4" strips 1 tsp chili flakes (optional)
2 eggs 1/2 cup parmesan cheese, freshly grated
1/2 cup heavy cream Salt and freshly ground black pepper
500g (1 pound) spaghetti Freshly grated parmesan cheese for serving
Directions In a bowl, beat the eggs until blended. Add the parmesan cheese and stir well.
Cook the spaghetti according to instrtuctions on packaging (al dente).
While the spaghetti is cooking, in a heavy skillet add the bacon strips and fry until the bacon is crisp. Add the chili flakes, heavy cream, season with salt and black pepper and simmer until the spaghetti is cooked.
Drain the spaghetti and return to the cooking pot. Add the butter and toss well until it melts. Add the bacon and cream mixture and toss well. Add the egg and cheese mixture and toss for 1 - 2 minutes more. The heat from the spaghetti will cook the eggs.
Serve with more freshly grated parmesan cheese and black pepper. Notes and tips The black pepper in the spaghetti carbonara recipe is an important ingredient. Use lots of it, and if possible, freshly ground.
