Ingredients 2 Tbsp extra-virgin olive oil 1 medium yellow onion, finely chopped 1 large pickled red onion, thinly sliced 1/2 dried red chili, finely chopped 2 garlic clove, finely sliced 4 Tbsp pesto sauce Salt and freshly ground black pepper 1 lb penne or similar type of pasta
Extra-virgin olive oil to drizzle on top Freshly grated Parmesan cheese
Directions In a saucepan heat 2 Tbsp of olive oil on medium heat. Add the onion, pickled red onion and chili and cook until the onions are caramelized. Add the garlic and cook for 1 to 2 minutes more, stirring often, making sure not to brown the garlic. Remove from the heat and set aside.
In the meantime, cook the pasta in lots of boiling salted water, al dente, according to directions on the package. When the pasta is cooked, drain, pour into the saucepan and toss until ingredients are well blended. Add the pesto and toss again, to cover the pasta with the sauce.
Serve in individual plates, drizzle some more olive oil on top and add freshly grated Parmesan cheese.
