Pasta in sage and brown butter sauce recipe Share this recipe on FacebookA simple, yet delicious pasta dish using butter and fresh sage as the main ingredients. The sauce has a brown color, hence its name. This brown color comes from the burned butter. The sauce and pasta take approximately the same amount of time to cook (around 10 minutes). The only preparation needed is to boil the water for cooking the pasta.
Preparation time: 5 minutes, Cooking time: 10 minutes, Serves: 4
Ingredients 5 Tbsp unsalted butter A handful fresh sage leaves (around 20 small sage leaves) 1/4 cup chicken broth
Salt and black pepper to taste
Pasta for 4 (around 120g per person)
Grated Parmesan cheese (to serve with)
Directions Start cooking the pasta in lots of salted, boiling water. Make sure you cook them 'al dente' (check the cooking time on the packaging).
While the pasta is cooking, start making the sauce.
In a saucepan over medium heat add the butter and cook, stirring occasionally for 5 minutes, or until the butter starts turning brown. Add the fresh sage leaves and the chicken stock and reduce the heat to low. Let the sauce simmer for about 3 to 4 minutes, until slightly thickened. Taste and season with salt and black pepper to taste.
When the pasta is cooked, drain and return to the cooking pot. Pour the brown butter sage sauce on top of them and toss well until the pasta is well covered in the sauce.
Serve in individual dishes with freshly grated Parmesan cheese on top.
