Minestrone Soup recipe
Share this recipe on FacebookA delicious and healthy Italian soup, Minestrone combines vegetables such as carrots, onions, cauliflower, beans, potatoes, cabbage, endive and tomatoes with beans, chickpeas, salt pork and pasta (ditelini or similar). If you cannot get all of the ingredients used in this recipe, substisute with equal quantities of similar ingredients.
Preparation time: 10 minutes, Cooking time: 30 minutes, Serves: 4
Ingredients
2 Tbsp olive oil
1 carrot, minced
3/4 onion, minced
1 piece salt pork, minced
¼ tsp dried sage
1 can peeled tomatoes
2 quarts water
Salt and black pepper to taste
2 potatoes, chopped
1 carrot, thinly sliced
2 celery stalks, sliced
¼ head cauliflower, broken in small pieces
1 potato, thinly sliced
¼ bunch spinach
¼ bunch escarole
1 onion, thinly sliced
¼ bunch endive
1 cup peas
2 zucchini, sliced and quartered
¼ head cabbage
½ cup canned chick peas
½ cup canned kidney beans
1 cup ditalini (or similar, small shaped pasta)
Directions
Fry the minced carrot, minced onion, and salt pork in the olive oil, until the onions are transluscent. Add sage and canned tomatoes and let them cook for a few minutes. Add the water and season with salt and freshly ground black pepper to taste.
Add the 2 potatoes, sliced carrot and celery, and cauliflower and simmer for 10 minutes.
Add the thinly sliced potato, the spinach, escarole, onion, endive, peas, zucchini, and cabbage. Let cook for
15 minutes.
Add the chick peas, kidney beans and ditalini and cook for another 10 minutes.
Serve hot.
