A great red chili sauce, ideal with many Mexican dishes such as enchiladas, chimichangas, tamales, tacos, burritos and more. Easy to make, this sauce can be refrigerated and sevelar weeks.
 

A recipe for the famous Mexican dish, enchiladas. Enchiladas are made from flour or corn tortillas that are first fried, then stuffed with chicken, beef, cheese or other ingredients, topped with cheese and sometimes a tomato based sauce and finally baked in the oven. Whatever the variation, enchiladas are always among the favorite Mexican dishes. Served with Mexican fried rice and other condiments, enchiladas make a complete meal.
 

Burritos are another Mexican favorite recipe, very similar to enchiladas. In this recipe, flour tortillas are filled with a beef steak and bean mixture, folded like an envelope, topped with a tomato based chili sauce and cheese and baked until the cheese melts. Burritos can be served as a starter or main dish, together with Mexican condiments.

Beef burritos is a favourite Mexican dish. In this recipe, the tortillas are filled with a beef paste, refried beans, sour cream, grated cheese and enchilada sauce and served with shredded lettuce, sliced onion and tomato.
 

Another classic chili with meat recipe using a combination of minced meats (beef, pork and chorrizo sausage). The meat is cooked in beer, tomato sauce and several herbs and spices. This chili con carne dish is supposed to be quite hot, hence the use of chorrizo sausage (a hot Mexican sausage), jalapeno peppers and chili powder.
 

A great Mexican salsa with tomatillos (small green tomatoes widely used in the Mexican cusine) and chipotle chiles. The tomatillos are first roasted, then mixed with the chipotles, sauteed onion, coriander, vinegar and dried oregano. The salsa makes a great side dish with most Mexican dishes.
 

Another beef steak fajitas recipe using rump steak (or similar) instead of skirt steak. Whereas the traditional beef steak fajitas recipe requires that the steak is cooked over coals, in this recipe, the steak is fried in a skillet or frying pan. The beef steak is first marinated for several hours with oil and spices and then cooked for a few minutes.
 

Here is another chili recipe that is hot and delicious. The ingredients used in this recipe may look a lot, but most of them are spices and herbs that are added together at the final stage of cooking. Unlike many other chili recipes, this one does not use red kidney or other type of beans. Instead, it uses a variety of fresh and powdered chili peppers, such as jalapeno, green chilies, cayenne etc. The resulting dish is quite hot, but equally tasty. Serve it with Mexican fried rice. sour cream and fresh chopped coriander for a complete meal.
