Tomatillo salsa is another Mexican salsa that uses tomattillos and chili peppers as main ingredients. It can be served with tortilla chips or as a condiment with fajitas, tacos or similar dishes.

A recipe for a classic Mexican dish. Chimichangas are basically made with stripes of cooked chicken breast wrapped in flour tortillas and then deep fried until crisp. They are usually served with guacamole and sour cream.
 

Chicken enchiladas are chicken with enchilada sauce and cheese wrapped in a flour tortilla and baked in the oven. This chicken used in the recipe is first marinated in a marinade made of ancho chiles (a type of dried chiles), garlic, onion and spices. The chicken is then pan fried, sliced and used as a filling for the flour tortillas, together with enchilada sauce, onion and cheese. Enchiladas make a great dish when served with fried rice and Mexican condiments such as guacamole, sour cream, jalapeno peppers and salsa.
 

Texas style stacked cheese enchiladas. Corn tortillas are layered with cheese, onions and chili sauce in between, cooked until the cheese melts, and served with a fried egg on top. A delicious Tex-Mex dish that takes a bit of effort to make but is definetely worth it.
