Salsa, meaning sauce in Spanish, is a typical accompaniment for most Mexican dishes. There are many different types of salsas available, some cooked and some uncooked (fresh). The main ingredients of salsa are tomatoes, onion and chili peppers. Pico de gallo is a fresh tomato salsa, ideal for almost any Mexican dish.

Casserole enchilada is a Mexican dish similar to Italian lasagna, where flour tortillas are used to create layers of cheese, salsa and refried beans, chicken, beef or other ingredients. This recipe uses refried beans together with cheese, salsa, black olives, onion and coriander. The dish is baked in the oven until the cheese is bubbly. Enchiladas make a great family or party dish/ Serve with more salsa or guacamole.
 

Burritos are another Mexican favorite recipe, very similar to enchiladas. In this recipe, flour tortillas are filled with a beef steak and bean mixture, folded like an envelope, topped with a tomato based chili sauce and cheese and baked until the cheese melts. Burritos can be served as a starter or main dish, together with Mexican condiments.
 

Pollo picante is chicken breasts cooked in a hot sauce made with onions, garlic, bell peppers, tomatoes, jalapenos, bay leaves and garlic. The sauce is quite hot as it uses Tabasco sauce, black pepper, cayenne pepper and jalapenos. If you fo not like hot dishes, reduce the amount of cayenne, black pepper and Tabasco used. For a complete meal serve this dish with Mexican fried rice, flour tortillas and a simple green salad made with celery and avocado.
 

Enchilada lasagna is Mexican dish that looks like Italian lasagna. Instead of the pasta (that is used in Italian lasagna), corn tortillas are used in this dish. The filling is made of chicken, bell peppers and spring onions, flavored with typical Mexican spices such as cumin, paprica and oregano. The ingredients are topped with shredded cheese and a cheese bechamel (a flour based sauce flavored with cheese). The layer of ingredients is repeated once more and the dish is cooked in the oven for about an hour. The resulting dish is delicious. It has the look of Italian lasagna but tastes like enchiladas. Serve with sour cream and salsa for a complete dish.

Nachos are tortilla chips topped with melted cheddar cheese and sliced jalapeno peppers, great as a starter dish. This recipe shows how to make original homemade nachos. Nachos can be served with sour cream, salsa, guacamole and freshly chopped cilantro (coriander).

A chile cheese sauce typically served as a dipping with chips or flour tortillas. The traditional Mexican version of this cheese sauce uses Asadero cheese; the Tex Mex version of the sauce uses Jack cheese. You can use whichever cheese (Asadero or Jack) you like, or even a combination of the two.
