Ricette di pollo

A chicken version of the famous Mexican fajitas. It uses chicken breast, bell peppers and onion as main ingredients and a variety of spices. The chicken has to be marinated for at least 6 hours so it is good to prepare it a day ahead and let it marinate overnight.
 

Chicken chimichangas are a delicious and extremely easy to make Mexican dish. Flour tortillas are filled with cooked chicken, onion and cheese and deep fried until crisp and golden brown. Serve with fried rice and condiments such as sour cream, guacamole and salsa for a complete meal.
 

Chicken breasts marinaded in lemon juice and garlic, grilled, and served with a tomato basil sauce. Great as a main dish when served with a simple green salad and pasta or polenta.

Pollo picante is chicken breasts cooked in a hot sauce made with onions, garlic, bell peppers, tomatoes, jalapenos, bay leaves and garlic. The sauce is quite hot as it uses Tabasco sauce, black pepper, cayenne pepper and jalapenos. If you fo not like hot dishes, reduce the amount of cayenne, black pepper and Tabasco used. For a complete meal serve this dish with Mexican fried rice, flour tortillas and a simple green salad made with celery and avocado.
 

Another chicken enchiladas recipe using a special chile sauce called zacatecanas. Corn tortillas are lightly fried, filled with a chicken mixture and topped with a chile, cheese and sour cream based sauce. Serve with guacamole, salsa and other Mexican condiments for a complete meal.
 

A classic Mexican chicken in mole paste recipe. The chicken is first boiled, then cooked in a sauce made with mole paste. Mole paste is a famous Mexican type of sauce that is made with a variety of ingredients including chiles, Mexican chocolate, raisins, almonds and much more. You can buy  ready made mole paste in jars from supermarkets or you can make your own (a recipe is included). The chicken in mole paste dish can be served with refried beans, corn tortillas and Mexican fried rice, or with condiments of your liking.
 

A great chicken enchiladas dish in a roasted tomatillo sauce. This Tex-Mex recipe uses a filling made with chicken thighs, bell pepper, onion, tomatoes, garlic and typical Mexican spices. Corn tortillas are softened and filled witht eh chicken mixture, then topped with the roasted tomatillo sauce and cheese. They are finally baked until the cheese melts. Enchiladas are served with freshly made salsa, guacamole and sour cream.
 

Chicken pieces coated in a lime, lemon, garlic and turmeric flavored sauce and broiled until crisp on the outside, juicy on the inside. This dish is very easy to make but extra delicious. Serve with a green salad and mashed potatoes.
