Tomato based pasta sauces For extra flavour in tomato based pasta sauces add 1 or 2 tablespoons of tomato ketchup.
Temperature for baking eggs Eggs should be at room temperature before baking. Take them out of the refrigirator and leave them for 30 minutes before using them or, if you are in a hurry, place them in warm water for 10 - 15 minutes.
Increasing the life of fresh tomatoes You can increase tomato life by storing them with the stem pointing down.
Storing fresh tomatoes Store tomatoes in a warm and dry spot, away from direct sunlight. Sunlight will soften tomatoes but not rippen them.
Freezing whole tomatoes You can freeze whole tomatoes in plastic frezer bags. When needed, place in hot water and when thawed, squeeze to extract juice or peel skin off and blend
How to make tarragon vinegar Ingredients:

1 pt. cider vinegar
1 pt. white vinegar
3 tbsp. dry tarragon

(Yields 1 qt)

Instructions:

In a clean glass jar place the dried tarragon. Bring vinegar to a light boil and pour into the jar (over the tarragon). Let it cool (do not cap)

If the jar has a metal lid place plastic wrap over jar before putting on lid so the vinegar does not come into contact with any metal. Place in a dry, dark area. After 2 weeks strain the tarragon vinegar through cheesecloth and pour into new a clean jar or glass bottle. You can add a stem or two of fresh tarragon to the vinegar for a garnish.
Sweetening sauces without using sugar Use carrots instead of sugar to add sweetness to your sauce. Carrots can be chopped or even grated for a finer texture of the sauce.
Storing ground herbs To preserve the aroma of ground herbs keep them away from light. It is a good idea to use containers that shield the contents from light.
Storing cheese Store cheese in the refrigerator, wrapped tightly in plastic membrane. Air helps mold develop on cheese so when wrapping it in plastic, wrap it tight, making sure that there is no air kept inside.
Spagetti and olive oil in boiling water Do not add olive oil in the water while cooking your spagetti. Doing so, will prevent the sauce from blending with the spagetti. To keep your spagetti from sticking while boiling, use good quality spagetti and stir often.
