A great chicken enchiladas dish in a roasted tomatillo sauce. This Tex-Mex recipe uses a filling made with chicken thighs, bell pepper, onion, tomatoes, garlic and typical Mexican spices. Corn tortillas are softened and filled witht eh chicken mixture, then topped with the roasted tomatillo sauce and cheese. They are finally baked until the cheese melts. Enchiladas are served with freshly made salsa, guacamole and sour cream.
 

Carnitas are corn tortillas filled with a pork mixture and other ingredients. In this recipe, the pork is first cooked in water, spices, herbs and tomatoes for several hours, then roasted briefly. It is then used as a filling for corn tortillas, together with typical Mexican ingredients such as avocado, lettuce, refried beans and cheese.
 

Mexican tamales are packets of corn dough filled with a savory or sweet filling, typically wrapped in softened corn husks or banana leaves. Tamales are typically filled with beef, pork, chicken, chili or beans.
 

Flour tortillas spread with a spicy tomato based sauce, topped with cooked chicken and cheese, rolled up, topped with extra tomato sauce and cheese and baked in the oven until the cheese melts. A classic Mexican recipe and is great as a main dish, served with condiments such as sour cream, tomato salsa or salsa verde and guacamole. The dish can be prepared in advance and refrigerated (do not bake until needed).
 

White rice cooked in water and then mixed with bell peppers, mayonnaise, onion, cheese and salsa picante. Great with traditional Mexican dishes such as tacos, enchiladas, chimichangas etc.
 

Here is another chili recipe that is hot and delicious. The ingredients used in this recipe may look a lot, but most of them are spices and herbs that are added together at the final stage of cooking. Unlike many other chili recipes, this one does not use red kidney or other type of beans. Instead, it uses a variety of fresh and powdered chili peppers, such as jalapeno, green chilies, cayenne etc. The resulting dish is quite hot, but equally tasty. Serve it with Mexican fried rice. sour cream and fresh chopped coriander for a complete meal.
