This is a great chicken enchiladas dish, made with a spicy and hot sauce that includes among others, cumin, oregano, chipotle chilies and adobo sauce. The tortillas are stuffed with chicken, cheese and onion, topped with more cheese and the sauce and baked until the sauce and cheese bubble. This typical Mexican dish is a great main dish when served with Mexican style rice and various condiments like sour cream, tomato salsa and guacamole.

Chimichangas is another Mexican favorite. Flour tortillas are filled with a beef mixture and sauce, rolled up and deep fried in vegetable oil. They are served together with jalapeno peppers, lettuce, grated cheese, together with condiments such as pico de gallo, salsa, guacamole, etc. There are a lot of different types of chimichangas, depending on the filling, such as chicken chimichangas, beef chimichangas, etc. This recipe uses a combination of beef and chorizo sausage, a Mexican type of sausage that is quite hot and spicy.
 

Easy homemade pickled jalapeno peppers, great as a Mexican condiment or ingredient in recipes such as nachos, tacos, enchiladas, salsas and more. Pickled jalapenos can be refrigerated for several months so you can make more by increasing the ingredients proportinally - just make sure that the chiles are covered in the pickling liquid.
