Creamy Ceasar style dressing with garlic infused oil recipe Share this recipe on FacebookThis creamy Ceasar style salad dressing is based on a garlic infused vegetable oil, egg yolks, red wine vinegar, lemon juice and Worcestershire sauce. It can be made in advance and refrigerated for 2 to 3 days. You can use a ready made garlic infused vegetable oil or make your own, as shown below.

Ingredients 1/2 cup vegetable oil 1 clove garlic, crushed
2 Tbsp red wine vinegar 2 Tbsp lemon juice 1/8 tsp Worcestershire sauce
1/4 tsp dry mustard 2 egg yolks
Directions To make the garlic infused olive oil Add the vegetable oil and garlic in a jar with tight fitting lid. Refrigerate for several hours or overnight for best results. Open the jar, discard the garlic and set aside.
In a small saucepan over very low heat, add the remaining ingredients (red wine vinegar, lemon juice, Worcestershire sauce, mustard and egg yolks)
and cook, stirring constantly, until the mixture thickens and bubbles around the edges.
Remove from the heat and let cool for 15 - 20 minutes. Pour the sauce and the garlic infused oil into a blender and process until well combined and smooth. Pour back into the jar, cover and chill until used.
