Ingredients For the crust 2 cups graham cracker or digestive biscuit crumbs 3/4 cup butter, melted
For the filling 12 oz. semisweet chocolate
24 oz. cream cheese, at room temperature 1 1/4 cup sugar 3 eggs 2 tsp. vanilla extract 1 Tbsp cocoa powder 16 oz. sour cream
Directions Prepare teh cheesecake base Make the cheesecake base by combining the crumbs with the butter until smooth. Press the mixture on the bottom and sides of a 9 inch springform pan then chill until the filling is prepared.
Preheat oven to 300 degrees F (150 degrees C).
Make the cheesecake filling Melt the chocolate in a bowl over simmering water.
In another bowl beat the cream cheese with an electric mixer on medium speed until light and fluffy. Start adding the sugar while mixging until it is well incorporated into the cheese.
Start adding the eggs, one at a time, mixing well after each addition. Add the melted chocolate, cocoa powder and vanilla essense and mix until blended. Finally stir in the sour cream and continue mixing until you get a uniform mixture. Pour the cheesecake mixture into the crust.
Bake the cheesecake Bake the cheesecake for 1 hour and 40 minutes. Remove from the oven and place on a wire rack to cool. Chill for 5 to 6 hours (better overnight) before serving.
