Ingredients 2 cups all purpose flour 1 Tbsp baking powder 1 tsp sugar (adjust to taste) 1/2 tsp salt 1 stick (115 g) unsalted butter, cold, cur into small pieces 3/4 cup buttermilk or single cream
Directions Preheat the oven to 450 degrees F (225 degrees C).
In a large mixing bowl add the flour, baking powder, sugar and salt and mix well. Add the butter into the flour mixture and use your hands to mix it in until it resembles pea-sized crumbs. Add the buttermilk or cream and mix until you have a uniform, sticky mixture.
Empty the dough on a floured surface and knead for about a minute, adding a bit of extra flour if needed, until the dough is smooth and not wet.
Shape the dough into a ball, hit it with the rolling pin, turn and fold in half, then hit it again a couple of times. Repeat turning, folding and hitting the dough for a couple of minutes.
Roll out the dough to 1/4 of an inch thick rectangle, then fold it in half. Use a round biscuit cutter (if you don't have one you can use a glass) cut out the biscuits and place them on a greased baking dish. Make sure you place the biscuits one close to the other sot that when they rise, they rise upwards, not sideways. You should be able make about 10 to 12 biscuits.
Bake biscuits for 15 minutes or until their tops are golden brown.
