Chipotle chilli con carne (beef chilli with Chipotle chiles) recipe 

Chile con carne, or chilli with meat, is one of the most popular Mexican or Tex-Mex recipes. It is basically a spicy meat stew with lots of spices. This recipe uses Chipotle chiles, a dried, smoked Jalapeno type of chile and has a great smokey flavor. The chilli takes quite some time to cook, since the meat that is being used is not tender enough - a long cooking process is therefore required to tenderize the meat. Chilli refrigerates well for 1 or 2 weeks and can be frozen for one or two months. Refrigerating chili for at least 24 hours actually improves its taste and the extra time allows for the flavors to enhance.

A chicken, brown rice and black or red kidney bean enchiladas dish, easy to make and great in taste. As with all enchiladas dishes, corn tortillas are filled with a meat or bean mixture that includes cheese, topped with some type of tomato and chili based sauce and finally baked in the oven. Enchiladas can be served as a first or main dish, together with Mexican condiments such as salsa or sour cream.

Chilaquiles with tomatillo and ancho chilli salsa recipe 

Another easy to make Mexican dish that makes use of left over, stale corn tortillas. The tortillas are quartered and fried until crispy, then cooked in a homemade tomatillo and ancho chile salsa together with cooked chicken. This dish is served with sour cream, Mexican Cotija cheese and lime wedges. Note that you can omit the chicken if you like.

This recipe uses both beef and pork meat, spices, parsley, butter, tomatoes and bell peppers and instead of red kidney beans, is uses pinto beans. You can substitute the pinto beans with red kidney beans or borlotti beans but if you want to be as close to the original recipe as possible, try to use the pinto beans.

Spicy shrimp chipotle recipe 

This recipe is based on a version of Spicy shrimp Chipotle found on Don Enrique dried Chipotle chiles. Chipotle chiles are dried, smoked Jalapeno peppers. The chiles have medium heat and a strong smokey flavour. The shrimps are cooked in a chile and garlic paste, together with curry powder, paprica and lemon juice. They can be served over steamed rice or in flour tortillas, together with salsa and sour cream.
