The best chili con carne recipe 

This is the best chili con carne recipe by far. It is based on the Chili con carne (best version) recipe but has a several modifications, mainly by using bacon, dried chillies, beer and some extra spices. The chili freezes well - it actually tastes better after 24 hours. It can be served with Mexican fried rice or jacket potatoes and sour cream.

Chipotle chilli con carne (beef chilli with Chipotle chiles) recipe 

Chile con carne, or chilli with meat, is one of the most popular Mexican or Tex-Mex recipes. It is basically a spicy meat stew with lots of spices. This recipe uses Chipotle chiles, a dried, smoked Jalapeno type of chile and has a great smokey flavor. The chilli takes quite some time to cook, since the meat that is being used is not tender enough - a long cooking process is therefore required to tenderize the meat. Chilli refrigerates well for 1 or 2 weeks and can be frozen for one or two months. Refrigerating chili for at least 24 hours actually improves its taste and the extra time allows for the flavors to enhance.

Chicken breast in mole rojo (chicken in red sauce) recipe 

A classic Mexican chicken in mole paste recipe. The chicken is first boiled, then cooked in a sauce made with mole paste. Mole paste is a famous Mexican type of sauce that is made with a variety of ingredients including chiles, Mexican chocolate, raisins, almonds and much more. You can buy  ready made mole paste in jars from supermarkets or you can make your own (a recipe is included). The chicken in mole paste dish can be served with refried beans, corn tortillas and Mexican fried rice, or with condiments of your liking.

TexMex pork asado recipe 

A classic Tex-Mex dish, pork Asado is pork slow cooked in a garlic and chile sauce. The chiles used in this recipe are dried and before using them, they have to be dehydrated, ie, soaked in water for 8 to 10 hours. It is therefore best to soak the chiles a day ahead.

Hot and spicy Chili con carne recipe 

Here is another chili recipe that is hot and delicious. The ingredients used in this recipe may look a lot, but most of them are spices and herbs that are added together at the final stage of cooking. Unlike many other chili recipes, this one does not use red kidney or other type of beans. Instead, it uses a variety of fresh and powdered chili peppers, such as jalapeno, green chilies, cayenne etc. The resulting dish is quite hot, but equally tasty.
