Chipotle chilli con carne (beef chilli with Chipotle chiles) recipe 

Chile con carne, or chilli with meat, is one of the most popular Mexican or Tex-Mex recipes. It is basically a spicy meat stew with lots of spices. This recipe uses Chipotle chiles, a dried, smoked Jalapeno type of chile and has a great smokey flavor. The chilli takes quite some time to cook, since the meat that is being used is not tender enough - a long cooking process is therefore required to tenderize the meat. Chilli refrigerates well for 1 or 2 weeks and can be frozen for one or two months. Refrigerating chili for at least 24 hours actually improves its taste and the extra time allows for the flavors to enhance.

Beef steak fajitas (steak fahitas) using skirt steak recipe 

The traditional beef steak fajitas recipe, using skirt steak. Skirt steak is quite a tough meat to eat, so to tenderize it, it is marinaded in tequila, oil, lime juice and spices for several hours (you can marinate the steak overnight for best results). The steak is cooked over coals and served with lightly fried bell peppers and onions.

Beef steak fajitas (beef fahitas) using rump steak recipe 

Another beef steak fajitas recipe using rump steak (or similar) instead of skirt steak. Whereas the traditional beef steak fajitas recipe requires that the steak is cooked over coals, in this recipe, the steak is fried in a skillet or frying pan. The beef steak is first marinated for several hours with oil and spices and then cooked for a few minutes.

Shredded Beef Chimichangas (Chimichangas de carne de res) recipe 

Chimichangas is one of the favourite Mexican dishes that is tasty and very easy to make. A tortilla is filled with shredded or ground beef, chicken or pork together with other ingredients such as avocado, onion, tomato sauce, etc, depending on the recipe. The tortilla is folded like an envelope and then deep fried in vegetable oil, until crispy and golden brown on the outside. Chimichangas are served with shredded lettuce, salsa, guacamole and other condiments.
